From the team that made OKONOMI and YUJI Ramen, OSAKANA is a seafood retail store steeped in the Japanese philosophy of “mottainai” (“no waste”). Our shop in Williamsburg, Brooklyn butchers the best fresh local seafood caught by American fishermen. We also proudly host classes on fish preparation and Japanese cooking including guest chef appearances from Japan. The kitchen has been custom built to welcome in students for classes in the evenings. We accommodate pair and solo hands-on tutoring as well as intimate chef demos to groups of up to six students.

The Assistant Store Manager position supports the Store Manager in matters of inventory, food production, training staff, customer relations and maintaining the physical operations of the store. This position does much of the primary handling and production of product as well as ensuring that all other staff are maintaining our standards of quality.

This position will also be expected to teach classes to guests on various topics of Japanese cuisine and preparing seafood. Because of the high level of interaction with guests, the ideal candidate is capable of being very personable and informative while still working cleanly and proficiently in a professional kitchen.

We are a gratuity-free business; no tips are accepted. After a probationary period, full-time salaried employees vest into many benefits (healthcare, retirement fund matching, transportation reimbursement, etc.)

Responsibilities

Warm and professional interaction with guests
Receiving and butchering fish for cooking and for sashimi
Production of prepared foods and take out
Managing kitchen records
Maintaining a clean kitchen
Training new staff
Teaching cooking and butchery classes

Desired Qualifications
Knowledge of Japanese cuisine required, Japanese language not required but a plus
2 years professional kitchen experience
Experience using spreadsheets for budgeting and inventory management
Experience training kitchen staff

This is a full-time salaried position with benefits.
